Cell matrix collagen is broken down by Reactive Oxygen Species, which are produced by sun exposure, pollutants, and malnutrition. This causes skin to lose tone and elasticity.  Anti-oxidants are added to foods to fight off these cell damaging free radicals.  The anti-oxidant capacity is measured by Oxygen Radical Absorbency Capacity (O.R.A.C.) values.
